Life in Corsica is good ineded, all the more that my wife has now just given birth to a little baby boy in the ajaccio hospital!A honeymoon in Corsica sounds great and you have picked the right month of the year for it. the summer crowd has now gone but there is still good activity, the weather is still good, nature is blooming, temperatures are milder, beaches are empty With your limited budget for accomodation and looking for something on the coast, I would suggest that you rent a gite , which are usually friendly accomodations that, sometime, come with food. I would recommend three website options to look up for this kind of accomodation: auboncoin.fr , abritel.fr and the site gites de charme of the gites de France. I am not sure any of those are in English unfortunately but they are the mainstay for good accomodation in Corsica. If you start searching a little more inland, you might be able to get a pretty decent boutique hotel for this price. You might want to check out the Mare e monti in feliceto. I stayed there with my wife (ask them for the rooms with high ceiling on the lower floors) or the Palazzu in Pigna (a little more expensive but more romantic and their restaurant, I heard, is top notch).As for restaurants, if you stay in North Corsica, I would recommend the restaurant of the Palazzu in Pigna (above), the Pirates in Erbalunga (loved this one not sure if they still got their michelin star?) and do a little wine tour in Patromonio, you will be amazed by the quality of some fo the wines there.If you go for the South, where I live, you HAVE to go to Seraphin in the little village of Peri. Nice, plentiful, simple corsican food in a fabulous mountain setting. There is only one menu there and it is 45 euros all inclusive. Very few foreigners know the place but it is a favorite from the locals in Ajaccio. For a little more upscale : A Nepita (cheap elaborated cuisine) and L'Altru-versu in Ajaccio, Terra cotta and the Lido in Propriano.Finally, if you want to buy good charcuterie (best in the world in Corsica to my mind ), don't take it from supermarkets but try small villages.
