Preparation:
Rinse the fish in running water and ensure that they are free of scales; remove the head using kitchen scissors.
Score the sardines lightly along their entire length on both sides and remove the dorsal fin ; rinse the sardines once again and leave to dry on some kitchen paper.
In a bowl, place the brocciu cheese, egg, crushed garlic, chives and chopped parsley; season well and mix with a fork.
Pre-heat an oven (220°c).
Stuff each of the sardines with some of the mixture and secure with a toothpick.
Place the stuffed sardines in a baking dish, lightly oil and cook for 20 min.
Serve hot.
